About the Cheeses - Artequeso Farmstead Semi Curado

Artequeso Farmstead Semi Curado 6 Month cheese has a rich, buttery, distinctive, yet mild flavor with a lingering aftertaste. Raw milk makes for a creamier cheese, more complex, persistent and developed flavor. Artequeso uses only Raw Milk for their artisanal Cheeses. The Farmstead variety uses milk from the family farm only.

The cheesemaking process begins by collecting fresh milk straight from the Manchega Sheep right on the farm. Such proximity assures a consistent quality in crafting artisanal cheese from the culturing to coagulation to draining of the whey.

All natural, preservative-free animal Rennet is added to coagulate the milk. From there the curd is put in molds and pressed to remove any excess whey and give it its shape. This process lasts from 5-7 hours, much longer than industrial Manchego cheese. During this time the lactic bacteria that are present in the raw milk have time to develop. No preservatives such as Egg Lysozyme or Natamycin are used.

The fresh cheese is placed in a salt bath (all natural sea salt with no anti caking agents) where just the right amount is absorbed. The cheese is then removed and the maturation process begins.

During the maturation process an all-natural, antibiotic free coating is applied to protect the cheese from developing mold while preserving the natural flavor and freshness.

We buy Artequeso Manchego in full 3kg rounds and cut them into quarters as you order. Your vacuum-packed quarter round will weigh about one pound eleven ounces.

Artequeso Curado (Añejo) Raw-milk Manchego

Cured for eight to twelve months, this 100% raw sheep's milk D.O.P. Manchego is a nuanced delight on the tongue. Firm and fairly dry, its bold, nutty, flavors and aromas linger on the palate. Pairs well with Tempranillo or Cabernet, cantaloupe, jamón ibérico, or crusty bread with olive oil. Quarter-round, 1.65 lbs.

The secret is in the raw milk from free-range Manchegan ewes that graze in pastures rife with wild herbs and flowers. Castilla La Mancha is known for its cool, dry climate and rocky soil, much better suited to sheep and goats than cows. The history of the region’s sheep and cheesemaking goes back more than a thousand years. Today, most Manchego cheese is made from pasteurized sheep’s milk (sometimes blended with cow’s milk) that is trucked, stored, and processed in huge batches in factories. Not so with this Manchego. The sheep are owned by the same family and the cheesemaking is done by hand on their farm in Tembleque, in the heart of the La Mancha region. During the cure the cheeses are rubbed regularly with local olive oil, which gives the cheese a more protective rind and adds another dimension to its flavor and aromas.
