These cured, acorn-fed tenderloin sausages are made by the Pedroches Valley farmer's cooperative in Córdoba, Spain. Between them, the cooperative's members own just shy of a million acres of virgin Holm oak forest. The oak trees there produce some of the sweetest acorns in the world. It is in these forests that the farmers allow their 100% purebred Iberian pigs to roam freely, hunting for acorns and rooting for wild herbs. This diet accounts for the meat’s juicy flavor and marbled appearance. Our tenderloin lomo is air-dried and cured with a dash of Spanish paprika for 90 days to develop its unparalleled flavor.

These whole tenderloin sausages are made with the only purebred loin available in the U.S. market. Slice paper thin. Average weight 1.25 lbs.
