Cured for three years and made from the back legs of free-range iberico pigs, this is the more delicate, sought after version of iberico jamon. The sweet, nutty flavor of the scrub oak acorn comes through in the meat. Serve at room temperature and whatever you do, don't put it on bread. To be savored alone or perhaps with a glass of good red wine. Cured for three years.
