This is the trimmed, boneless version of our small Ibérico ham (smaller because it comes from the front leg). if you don't want a whole ham, this makes a good starter piece. Smaller and more affordable than a large ham, small Iberian hams (called Paletas in Spain) come from the same black iberian pigs their larger cousins.
In Spain, smaller hams are popular with couples and small families. The cost per pound is less because they have a bit more fat than the large hams and are not as cured for as much time, due to their smaller size.
Our boneless Ibérico ham comes vacuum-packed. It will keep for months before you open it. Once you open it, it will keep for a month or so in the refrigerator. We bet it won't last that long!
